To cheer you up I thought you might enjoy this recipe.<br />Zucchini Chips with Aioli <br />Ingredients<br />3 large zucchini<br />Sea salt<br />Freshly ground black pepper<br />Pinch of dried chilli flakes<br />2 tbs olive oil<br />Aioli<br />1 tbs light mayonnaise<br />1 tbs Greek yoghurt<br />2 small garlic cloves, crushed<br />2 tsp lemon juice <br />Method<br />1. Preheat oven to 200°C. Line two baking trays with baking paper. Using a vegetable peeler or a thin slicer, shave enough zucchini to cover the baking trays.<br />2. Season with salt, pepper and chilli flakes; flick with olive oil.<br />3. Bake until chips turn golden brown (about 10 to 12 minutes). Remove from oven and let cool on baking tray until they feel crisp. <br />4.
